Meals with Missionaries! Casual sandwiches & such

Kim and I were really looking forward to baking and cooking together in my kitchen and we got the opportunity for almost the entire visit! We ended up being blessed with Bruce's amazing amount of work in literally rebuilding our bedroom so the contents of the room were moved out and stacked around the rest of the house and I lost exactly half of my kitchen ... to include my baking center. So, sadly enough there was no breads or baking but I am praying for a future visit... smile. Speaking of the home remodeling done, I will share pictures and more on that story on the Home Notes blog.

Coffee and cooking... we got those in! The coffeepot was steadily perking out coffee and mugs were filled and refilled as the hours passed by from morning to evening. We also had to keep snacks and meals readily available for easy grabbing or quick sit downs to keep the guys going as they worked for hours and hours at a time some of the days on the bedroom project.

I made the guys tuna melts (I split some bread loaves and topped with all white tuna in olive oil with some shredded cheese and broiled it until melted and slightly browned) and these were served with sweet and kosher pickles and unsweetened ice tea.

One evening, we got deli roast beef and turkey, deli cheese slices and sandwich rolls along with whole wheat bread. We placed pickled okra, pickles, pickled vegetables, Romaine lettuce, condiments and a few other things in the center of the table. Each person made their sandwich right where they sat! It was easy serving, eating and clean up!

Another meal was pizza we picked up from Papa John's and we just propped our feet up and gathered in the living room to eat. We watched some TV, talked, discussed work with the men and the kids had a chance to talk to Kim. It was needed let down time and we all cherished every moment of it.

Monday Night Meal @ Michael's

Mark 8

1 In those days, when there was again a large crowd and they had nothing to eat, Jesus called His disciples and said to them, 2 "I feel compassion for the people because they have remained with Me now three days and have nothing to eat.

3 "If I send them away hungry to their homes, they will faint on the way; and some of them have come from a great distance."

4 And His disciples answered Him, "Where will anyone be able to find enough bread here in this desolate place to satisfy these people?"

5 And He was asking them, "How many loaves do you have?" And they said, "Seven."

6 And He directed the people to sit down on the ground; and taking the seven loaves, He gave thanks and broke them, and started giving them to His disciples to serve to them, and they served them to the people.

7 They also had a few small fish; and after He had blessed them, He ordered these to be served as well.

8 And they ate and were satisfied; and they picked up seven large baskets full of what was left over of the broken pieces.

9 About four thousand were there; and He sent them away.


God provides!
Grocery budgets are very low, pantries are found with more and more shelf space and time has been a huge issue in our kitchen. Even so, when we call on GOD for our supply, He answers.
Last night’s dinner proved this.

We had toasted turkey and cheese sandwiches (darling little toaster oven friend again) and served them with homemade brownies (not so great) and pickled okra. Some of us enjoyed pickled peppers with ours. ;)

We went to our oldest son’s house and shared some time watching “The Office” shows on demand and bouncing the little ones from one lap to another. It was a nice evening --- even if we did get back home late for a school night --- and everyone had plenty to eat.

We didn’t care for these brownies. They have very high ratings on allrecipes but I don’t plan on making them again.

There are three reasons I can guess at what could have made these be such a waste of ingredients:

1. I used half sucanat and half brown sugar in place of the white sugar because I was out. I do this all the time and rarely see a significant difference. Some of the reviewers did this anyway with white and brown sugar so I tried it. Could have contributed to a change in ingredient balance and made them dry.
2. I think an entire cup of cocoa powder for one pan of brownies is just too much. I love cocoa powder, love rich, rich chocolate desserts and this just seemed a little much.
3. I cooked them 35 minutes and think it could have made a difference to bake for 30 or maybe less.

Brooke's Best Bombshell Brownies

Ingredients:
1 cup butter, melted
3 cups white sugar
1 tablespoon vanilla extract
4 eggs 1 1/2 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon salt
1 cup semisweet chocolate chips

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 baking dish.
2. Combine the melted butter, sugar, and vanilla in a large bowl. Beat in the eggs, one at a time, mixing well after each, until thoroughly blended.
3. Sift together the flour, cocoa powder, and salt. Gradually stir the flour mixture into the chocolate mixture until blended. Stir in the chocolate morsels. Spread the batter evenly into the prepared baking dish.
4. Bake in preheated oven until an inserted toothpick comes out clean, 35 to 40 minutes. Remove, and cool pan on wire rack before cutting.

Our Lovely Lunch


Brandy, Emily, and Caden came over today and we had a lovely lunch together!

Our Menu:

Chicken Salad on Whole Grain Bread
Roasted Garlic for Sides of Sandwich Bread
Marinated Asparagus (gift from my mother)
Sautéed Mushrooms to serve on top of our chicken salad
Organic Spring Salad Mix
Chocolate Cobbler topped with scoops of vanilla bean ice cream
Coffee


Chicken Salad
In “The Good Housekeeping Cookbook) … I saw a recipe for Gourmet Chicken Salad. I altered it according to tastes of all involved and it was SO delicious!

Gourmet Chicken Salad
½ cup of mayonnaise (I used more of this and all ingredients bec/ I used a whole food processor bowl of cubed chicken breasts)
1 T. lemon juice
¼ tsp. salt
1/8 tsp. pepper
2 T. heavy cream
1/8 tsp. dried marjoram
4 large thick pieces of cold cooked chicken or turkey
Tomato slices (had not tomatoes)
Cucumber slices (had none)
Snipped parsley (forgot it)


Mix mayonnaise with lemon juice, salt, pepper, cream and marjoram. Use to coat pieces of chicken. Serve on greens, garnished with tomato and cucumber slices and snipped parsley. Makes 2 to 4 servings, depending on size of chicken pieces.


HOW I DID IT:
Filled food processor with cold, cubed, cooked chicken breasts. Drizzled heavy cream over it, added mayonnaise, salt, pepper, lemon juice, marjoram and mustard. Pulsed it until desired consistency. All ages loved it!


Roasted Garlic


I have a clay garlic roaster I’ve had and used for many years. I got it for under $10 when a Montgomery Wards store was going out of business! I’ve read you can use pie tins, baking dishes, and so on as long as they are oven safe!


I take a big knife and slice the very tips/tops of five or so heads of garlic and place cut side up in dish. I drizzle olive oil over the tops and sprinkle kosher salt and grind pepper over all. Roast at 350 degrees F. for 40 to 50 minutes.


My five year old eats this spread on his sandwiches!


Sautéed Mushrooms
I do my portabella and other fresh mushrooms the same.
I drizzle olive oil in a big cast iron skillet and put one to a few pats of butter depending on how many I’m making. I add sliced mushrooms to the skillet and sprinkle kosher and freshly ground pepper over them. Turn on high and either cook all the way through or cook to a certain point and change heat to medium.
Even my little grandgirl adores these!
Chocolate Cobbler

Cook Time: 30 Minutes Ready In: 45 Minutes
Yields: 8 servings

INGREDIENTS:
6 tablespoons butter
1 cup self-rising flour
3/4 cup white sugar
1 1/2 tablespoons
unsweetened cocoa powder
1/2 cup milk 1 teaspoon vanilla extract
1 cup white sugar
1/4 cup unsweetened cocoa
powder
1 1/2 cups boiling water

DIRECTIONS:
1. Preheat the oven to 350 degrees F (175 degrees C). Melt butter in an 8x8 inch baking dish while the oven preheats.
2. In a medium bowl, stir together the flour, 3/4 cup sugar, and 1 1/2 tablespoons cocoa. Stir in milk and vanilla until smooth. Spoon this batter over the melted butter in the baking dish.
3. Stir together the remaining cup of sugar and 1/4 cup cocoa powder. Sprinkle over the batter. Slowly pour boiling water over the top of the mixture.
4. Bake for 30 minutes in the preheated oven, until set. Serve slightly warm with ice cream.
